ABSOLUTE BEST DINNER IDEAS YOUR FAMILY WILL LOVE
Lately I have been super worn out of cooking the same meals every week (mostly ones I know my kids will eat) so I went on a quest to find different, yummy and even kid approved dinner recipes, and I’m here to share them!!
My favorite part about these dinner recipes is that they are all super easy to make and can easily be thrown together on a busy night if you have all the ingredients.
And just a little side note..if you don’t meal plan for the week, DO it! You will thank yourself when Monday evening rolls around and you actually know what you are making for dinner rather than stressing about what to make last minute so you throw a frozen pizza in the oven, haha (cause usually that’s me).
TACO SOUP
For this first dinner recipe, I love to make it in all seasons. It’s the perfect soup recipe on a fall day, the perfect soup recipe on a cold winter day, and still a perfect soup recipe on a warm summer day – because it is SO good!
I love making this with chicken but it also tastes yummy with ground beef or ground turkey.

RECIPE
Ingredients:

1 (15 ounce) can of petite tomatoes
-
1 (15 ounce) can or frozen package of corn (drained)
-
1 (15 ounce) can of black beans (drained)
-
1 (15 ounce) can of pinto beans (drained)
- 1 (15 ounce) can of white beans (drained)
- 1 (15 ounce) can of kidney beans (drained)

1 (10 3/4 ounce) can cream of chicken soup
-
1 lb shredded chicken
-
1 (32 ounce) carton of chicken Broth
-
1 Packet of Taco Seasoning
Topping Options:
-
Sliced or Diced Avocado
-
Cilantro
-
Sour Cream
-
Tortilla Chips or Strips (my favorite to pair with this is the blue corn Tortilla chips)

Shredded Cheese
Directions: In a large pot, add in all ingredients. Bring to a boil and let simmer over medium heat for about 10 minutes. Add toppings and enjoy! And yes, it really is THAT easy to make this seriously delish chicken taco soup!
Tips: You can totally boil your own chicken for this recipe but if you want to make it even more easy, run and get a rotisserie chicken to shred and toss in there. SO easy and yummy.
This is just as good (or even better) heated up as leftovers!
BAKED MAC AND CHEESE
This dinner recipe is for all the mac and cheese lovers (like my 4-year-old, ha) because it is the most delicious way to make mac and cheese!
This makes a great dinner recipe or even a dish to take with you to a potluck or family event-it’s just that good.

RECIPE
Ingredients:
- 3 1/2 cups uncooked elbow macaroni pasta
- 1/4 cup butter (cubed)
- 1/4 cup all-purpose of flour
- 1 teaspoon of salt
- 3/4 teaspoon of ground mustard
- 1/2 teaspoon of pepper
- 3 1/2 cups whole milk
- 5 cups shredded cheddar cheese, divided
Directions: Preheat your oven to 350 degrees. Cook your macaroni in lightly salted, boiling water until almost tender and then drain. In a saucepan, melt butter over medium heat.
Stir in your flour, salt, mustard, and pepper until it forms a smooth consistency. Cook while continuing to stir until it forms bubbles, for around a minute. Put in your cooked macaroni pasta, milk and 4 cups of your cheese.
Transfer to an ungreased baking dish and cover with aluminum foil. Bake covered for 30-40 minutes and then uncover and add on the remaining 1 cup of cheese. Bake uncovered for about another 5 minutes or until cheese is slightly melted. Let cool for 5-10 minutes and then serve! SO yummy.
VEGGIE FRIED RICE
This next dinner recipe is a staple in my home because my kids also love it and us moms know how hard that can be finding a meal the whole family loves. I also love this recipe because you can pretty much add in any veggie you like, and it will still taste SO good!
Most fried rice recipes include eggs, but I like mine way more without them, so I leave them out. However, if you love eggs in yours-add them!

RECIPE
Ingredients:

3 cups of white rice cooked
- 1 tablespoon olive oil
-
Half of a large onion, chopped
-
1/2 cup of carrots, chopped
- 1/2 cup cooked potato diced (optional but I love to add into mine!)

1/2 cup of red bell pepper, chopped
-
1/2 cup frozen peas
-
2 teaspoons of minced garlic
-
3 tablespoons of soy sauce
-
Salt and Pepper to taste
Directions: Heat your olive oil in a large skillet or pot over medium-high heat. Add in your onion, carrots, potatoes, bell peppers, and peas and cook for about 5 minutes or until all veggies are tender and heated. Add in your garlic and salt and pepper and cook for about another minute, but don’t let burn.
Add in your rice and stir in your soy sauce. Cook for about 5 more minutes or until everything is well mixed and heated through.
If preferred, add in more soy sauce or salt and pepper to your liking.
Serve immediately and top with fresh green onions if you like. SO good!!
LASAGNA SOUP
I know this is a soup recipe and most people think that soups can only be made in soup weather but that’s totally not true! This dinner recipe of lasagna soup is seriously so good no matter the temp outside.
Pair this with your favorite bread and WOW, so stinking good!!

RECIPE
Ingredients:
- 2 tablespoons olive oil
- 5 garlic cloves, minced
- 1 lb ground beef or turkey
- 1 large onion
- 4-5 cups chicken broth
- 1 can petite diced tomatoes
- 1 (14.5 oz) can crushed tomatoes
- 2 1/2 tablespoons tomato paste
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 dried rosemary
- 1/2 dried thyme
- Salt and pepper to taste
- 8 lasagna noodles
- 1 1/4 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 8 oz ricotta cheese
- 2 tablespoons fresh parsley
Directions: In a large pot, heat a tablespoon of olive oil over medium to high heat. Add beef (or meat of choice) along with salt and pepper to taste. Stir occasionally until browned and drain fat from the meat and return to pot.
Add in your remaining olive oil, your onion, and cook for an additional 3 minutes or so. Add in your garlic and cook for another minute.
Add in chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, rosemary, thyme and a little more salt and pepper.
Break your lasagna noodles into chunks (or you can leave them whole, but I love mine broken smaller!) and add them into your pot. Bring to a boil and let boil for about 5-10 minutes. Reduce heat and let simmer for 20-30 minutes. If your soup seems to have too thick of a consistency, use more chicken broth to thin.
Meanwhile, grab a mixing bowl and mix together your mozarella, parmesan, and ricotta.
Once your soup is finished and your noodles are tender, ladle into bowls and top it off with a big dollop of your cheese mixture. Sprinkle with fresh parsley if you like.
CREAMY SMOKED SAUSAGE PASTA
I’m not gonna lie, this is one of my favorite comfort meals ever. My whole family loves it (including my picky eater) so this is a regular in our house! I love pairing this recipe with a good salad and bread-seriously the best!!
If you don’t love smoked sausage much, substitute with chicken and it will turn out just as yummy!
RECIPE
Ingredients:

1 pound smoked sausage (sliced)
-
2 tablespoons olive oil
-
1 cup onion (diced)
-
4 cloves garlic (minced)
-
8 ounces bow tie pasta
-
14 ounce can of petite diced tomatoes
-
2 cups chicken broth
-
½ cup heavy whipping cream
-
½ teaspoon pepper
-
1 teaspoon salt
-
1/2 cup parmesan cheese (grated or shredded)
- 1/2 cup cheddar cheese (shredded)
Directions: Heat your olive oil in a large skillet over medium to high heat. Next, add in the sliced sausage and onion and cook until onion is softened. Add in garlic and cook for a minute more.
In your skillet, add in your chicken broth, cream, tomatoes, and pasta and bring to a boil. Cover and simmer over low to medium heat for 15-20 minutes. Remove from heat and stir in your cheese.
Once cheese melts, stir well and scoop into bowls! SO YUMMY.
